Fresh black truffles from northern Spain are added to fresh sheep’s milk from Quesería 1605’s own herd, and left to macerate before turning the milk into wheels of Manchego. The result is delicious - a perfect balance of fresh truffle flavor, and the nutty, herbaceous notes inherent to the sheep’s milk.
