This wonderfully smooth, fudgy wheel is made in the style of French Morbier: complete with a line of vegetable ash through its center. Wheels are produced in traditional copper vats, which were reclaimed from French Comté production. Nutty, slightly fruity and a touch mustardy, Ashbrook is as ideal for snacking as it is for melting into one heck of a grilled cheese sandwich or mac 'n' cheese!
