This is a traditionally made, natural-rinded Manchego. Wheels are made only from the milk of Finca Sierra la Solana, whose Manchega sheep feed strictly on feed grown on the farm. A firm texture with beautifully balanced, complex flavors of hay and almonds and a sweet, lingering finish.
