We're so excited to introduce the newest cheese from the creamery at Jasper Hill Farm! Caspian is unlike any other domestically made cheese we’ve experienced. It is made more similarly to a type of Tomme that you would find in Savoie, France. 

Produced with the milk from Jasper Hill's own herd, Caspian has an undulating rind, full of rich and colorful microflora. Flavors near the rind harken forest floor and a shiitake-like umami. Beneath the rind, a rich, gooey creamline, leading into a denser, sweeter center. 

Try with a glass of crisp, white wine, or a dry, acidic cider.

Raw cow's milk cheese. Traditional rennet.

Jasper Hill Farm

Nestled amongst the hills of Vermont’s Northeast Kingdom sits Jasper Hill Farm, a legend in American cheesemaking and affinage. Founded by brothers Andy and Mateo Kehler as an effort to return profitability to the area’s dissipating agricultural landscape, Jasper Hill focuses on the value-added endeavor of crafting cheeses from the region’s outstanding milk. Their motto - “a taste of place” - speaks directly to this dedication. Initially solely a farmstead project, eventually Jasper Hill erected The Cellars: an aging facility both for in-house cheeses and collaborations with fellow local makers.
